Shortly after pressing, the skins are separated from the must – because winemaker Claudia pursues a clear vision: a Mallorcan elegant Rosado, light, fine, and never heavy or tannic. Color and tannins come from the skins, but with CLARI Rosado, freshness, clarity, and finesse are paramount.
With utmost care, everything is done to avoid oxidation – the proverbial poison for rosé. The grapes are harvested during the cool hours of the night and early morning, carefully transported, quickly processed, and consistently cooled. Fermentation takes place slowly and controllably in stainless steel tanks at a constant 10 to 11 °C. All of this preserves the delicate aroma, the subtle fruit, and the polished freshness that is so loved in Mallorca.
CLARI Rosado presents itself as radiantly delicate pink to salmon-colored, fresh and elegant, with a harmonious balance between lively acidity and fine aromas of red fruits – strawberries, cherries, a hint of melon – accompanied by Mediterranean herbs. Mineral and almost vibrant, it carries the taste of summer and the scent of Mallorca within it – captured in a single glass.
